What are microgreens, and why are they so good for you?
Microgreens are young plants that are harvested just a few weeks after germination while only a few inches tall. Despite their small size, microgreens are loaded with nutrients- including vitamins, minerals, and antioxidants. In fact, some studies have found that microgreens contain up to 40 times more nutrients than their mature counterparts!
